Hunan and Szechuan

Canton - Cantonese
Southern region style noted for its cooking over a light fire, making dishes more tender and crispy. This was the first cooking style introduced in America by early Chinese immigrants. Dishes include Stir-Fried Sea Bass and Moo Goo Gai Pan.

Shanghai
Eastern costal city cuisine featuring dishes of exquisite delicacy. The Shanghai cooking style is characterized by its slightly sweet flavor and attractive coloring such as the Sweet and Sour Pork.
